Mill Creek Cold Pea Salad



Mill Creek Farm Fresh Peas

4 cups (2 pkgs)

Bacon, chopped

1/2 cup

Red Onion, chopped

1/8 cup

Vegenaise Dressing

Soy Milk (full-fat, unsweetened, non-flavoured)

1/2 cup

Apple Cider Vinegar

1/4 teaspoon

Honey or Maple Syrup

1/4 teaspoon

Lemon Juice

1/2 teaspoon

Dijon Mustard

1/8 teaspoon

Grapeseed Oil

1/2 cup

Extra Virgin Olive Oil

1/2 cup + 2 tablespoons

Sweet Pickle Juice

1 tablespoon

Salt & Pepper

to taste


Vegenaise Dressing


Place all ingredients except the oils and sweet pickle juice into a blender and blitz on high speed until creamy.


With the blender on low speed, slowly stream in the oils to emulsify the mixture. Scrape down the sides of the blender and mix again. If the mix comes out too thick add a splash of water, and season to taste with salt, pepper and lemon juice. put in a mason jar and refrigerate to thicken.



Bring a pot of salted water to a boil. Add Mill Creek Farm Peas to blanch for 1 minute. Drain boiling water and immediately fill pot with cold water (adding ice cubes to speed the chilling process).


Add the peas to a large bowl. Add the chopped bacon, onion and set aside.


Remove the dressing from the refrigerator, add the sweet pickle juice and shake well. Add the mixture to the salad and gently stir to combine. Add salt & pepper to taste. Enjoy!
